Hygiene internship according to § 55(1) and 56(1) TAppV

The test methods for foodstuffs are defined by national and international standards (DIN, EN, ISO). At national level, the official collection of test methods (ASU) based on § 64 of the German Food and Feed Code (LFGB) is the central collection of methods. The link between theoretical knowledge and methodological practice is taught as part of this practical hygiene course. The practical course in accordance with § 55/§ 56 TAppV is divided into a classical microbiological section and a section in which molecular biological and protein chemical techniques are developed and discussed.
The microbiological part of the practical course takes place in the Department of Microbiological Diagnostics. Here the students experience the examination of food samples from external senders. They follow the entire workflow in a diagnostics laboratory specializing in food microbiology, from the incoming sample inspection to the examination within the framework of the legal requirements with the maintenance of the corresponding laboratory protocols to the diagnosis of the test results and the preparation of control reports. Practical skills are taught with the help of food samples that are spiked with various germs especially for the course. Students are responsible for analyzing and evaluating these samples in accordance with legal requirements. The students write a report, which is discussed in a final meeting.

In addition to classical cultural methods, molecular biological, molecular genetic, protein chemical and biophysical/physicochemical methods are pioneering for food monitoring and for the epidemiological investigation of food-borne outbreaks. This part of the internship is carried out in the research department of the chair in order to offer students the opportunity to learn the methods in the context of current issues and research projects.

Internship § 60(1) TAppV

This program is primarily aimed at people who are interested in research in the field of food microbiology. As part of a well-defined project, trainees immerse themselves intensively in the content and methodology of this field of work in the veterinary profession.

It may be possible to incorporate the topic worked on during the internship into a doctoral thesis.

Registration for an internship in accordance with § 60(1) TAppV must be coordinated with the head of the chair and the academic staff of the chair. If you are interested, please contact the chair's office.
