Plant toxins can contaminate food or feed in various ways and pose a risk to the health of consumers and livestock. We are interested in the occurrence and entry routes of plant toxins and their possible structural changes during processing, storage or digestion of food. To this end, we develop and use food model systems on a laboratory scale, in vitro digestion models and sensitive detection methods using ultra high-performance liquid-chromatography coupled to triple quadrupole mass spectrometry (UHPLC-TQ-MS).
